Dare I say it’s almost been TOO hot to eat these past few days. The only things that have been appealing to me are either frozen or extremely light and refreshing.
This past weekend, while we were attempting to hide from the heat and humidity in the AC, this salad was born. Simple, light and tasty were the only prerequisites and it turned out delicious.
Ingredients
- Arugula
- Gold Raisins
- Pignolia Nuts
- Freshly grated Parmesan
- 2 lemons, juiced
- Olive Oil
- Salt and pepper to taste
Pignolia nuts (or pine nuts) taste even better when lightly toasted.
A hunk of Parmesan cheese and you know whatever you are about to eat is going to taste great!
To make the dressing, whisk together the fresh lemon juice and olive oil, then lightly season with salt and pepper. You just want to moisten the arugula to add a little more flavor.
