An apple a day…

I seriously think I do eat an apple a day. More so because I truly enjoy them and not just for their health benefits, although that’s an added plus. I also try hard not to be the extremely loud and crunchy apple eater because it is one of the worse sounds to be stuck listening to!

Anyways, I always have tons of different types of apples in my apartment, they are a quick and easy snack. But for the purpose of this recipe, I took an apple snack one step further and made “Apple Nachos”.

Now this was my kind of dessert and can be made exactly to your liking. I wasn’t sure what to expect but the combination was sweet and tasty and because I used Granny Smith apples it had a bit of a sour kick to it.

I don’t know if I would classify Apple Nachos as a healthy dessert, but hey it’s better than eating those toppings with ice cream underneath!

  • 2 apples, sliced thin
  • Melted peanut butter
  • Chopped almonds
  • Granola
  • White and milk chocolate chips
  • Cinnamon and nutmeg to taste
  • Drizzle of maple syrup

Cut the apples up into thin slices and line them on a plate.

Sprinkle toppings generously on the slices.

We devoured these. I wouldn’t change a thing next time I make them.

White Washed

We are now “officially” in the clear, it’s post Memorial Day and wearing white is deemed acceptable!

Does that fashion rule even exist anymore? I’m not so sure, I think I hold forth its truths when it comes to bottoms and shoes. I steer clear of white pants, skirts and shorts until I feel like summer has arrived and wellll also because I’ll start to have a little color on my legs! But a white shirt, sweater, or even bag, I’m all for it- whatever the season is.

White in the summer is the perfect, clean look. It’s light and airy which is much needed during the warm temperatures and complements a healthy tan fabulously.

Weekend Doings

I love when a 3 day weekend equates to having Monday off rather than a Friday. There is something extra special about starting your week on a Tuesday. Plus, I spent Monday at the beach which was an even better way to start it off!

Memorial Day weekend did not disappoint. The days were long, busy and spent outdoors having a good time with friends and family. I’ve captured some highlights of the days below.
