Peanut Butter-Reeses Pieces Cookie


You know when you really want a freshly baked cookie but don’t want to make an entire batch because you know you will eat them all? Well that’s a predicament I’ve been in quite a few times until I came across this recipe for a SINGLE giant cookie (or 3-4 small ones). The cookie dough takes less than 5 minutes to make and after baking for about 20 minutes you are ready for a warm, freshly baked cookie!

The recipe can be altered to your liking, I went with Reeses Pieces and Peanut Butter because of my love for both and it was everything I could want (from a cookie)!

  • 2 tbsp unsalted butter, softened
  • 2 tbsp granulated sugar
  • 2 tbsp light brown sugar
  • 2 tbsp beaten egg
  • 1/2 tsp pure vanilla extract
  • 2 tbsp peanut butter
  • 1/2 cup flour
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1/4 cup Reeses Pieces

Preheat oven to 350 degrees. In a mixing bowl, whisk butter and sugars until fluffy.

Add egg and vanilla. Stir in peanut butter and then flour, baking soda and salt. Mix until combined. Fold in Reeses Pieces

Spoon onto baking sheet lined with parchment paper.

. Bake for about 20 minutes. Let cool for 10 minutes before eating. Enjoy!
